Chocolate quinoa truffles
Ingredients for 1 truffle mold or 2 chocolate bars:
120 g coconut oil
50 g icing sugar
80 g cocoa powder
4 tbsp quinoa
Rinse the quinoa and pat dry. Heat a non-stick pan and toast the quinoa for a few minutes. The quinoa has to be absolutely dry!
In the meantime, heat the coconut oil using a double boiler (boil water in a pan and set a glass bowl with the coconut oil on top). Mix in sugar and stir until fully dissolved, then add the cocoa powder. Make sure the chocolate mixture doesn’t get too hot.
Stir in the toasted quinoa and pour the mixture into the molds. Chill for at least 30 minutes or until firm.
